The healthy composition of onion

  • The one-fourth portion of onion slice contains 2 mg of sodium, 55 mg of potassium, and a limited amount of phosphorus which is 11 mg
  • Half cup of chopped onions contain sodium=3mg, potassium=117 mg, and phosphorus=23 mg
  • Half boiled onion contains 8 mg of sodium, 106 mg of potassium, and 2 mg of phosphorus

When onions are cut down, they release enzymes (allinases) which break down amino acid sulfoxides and produce propanethial-s-oxide. This form of volatile gas which when converted to thiosulfonates contributes to the pungent smell of the onion. This thiosulfinate is the main reason why we feel thirsty after eating raw onion as they results in heating and burning sensation.
